We officially have just one more day of summer left, so I’ve decided to celebrate with a happy hour tipple that combines the imbibable trend of the sunny season (the frozen drink) with a cocktail I inherently associate with fall: the dark and stormy. It gets its name from the tempestuous blend of dark rum and spicy ginger beer that results in a comforting cocktail that’s both bracing and refreshing.

Ingredients:
• 2 oz dark rum
• 1/2 oz lime juice
• 1 cup ice
• lime round and candied ginger, for garnish
Directions:
1. Add rum, lime juice and ice to a blender and blend until smooth.
2. Fill a highball glass two-thirds of the way full, then top with ice-cold ginger beer.
3. Garnish with lime wheel and candied ginger and serve immediately!
This drink is so delicious that I may have gotten a little tipsy during the making of this blog post. Whether it’s still hot where you are (hey, San Antonio!) or you can already feel the chill in the air like we can here in Seattle, you’ll be reaching for another round of this drink as soon as you pour the first one from the blender.
