In the past, I’ve been a fan of neither breakfast nor oatmeal. But that all changed after a barista at my local Starbucks handed me an overnight oats one morning as a treat (side note: my Starbucks is the best). I happened to be starving that morning, so I took a bite…and then another, and then another. I was amazed at how delicious the cold, coconutty dish could be, and I decided right then to come up with my own take on the easy breakfast.
For my version, I decided to skip the added sugar and instead load up on lush, tropical fruits like mango, golden kiwi and apricot for natural sweetness. Shredded coconut and blanched almonds provide the perfect textural foil to creaminess of the oats.
Not only is this breakfast beautiful, healthy and delicious, it’s super easy to make the night before and it’s perfect for taking with you to work.
Tropical Fruit Overnight Oats
• 1 cup old-fashioned oats
• 1 cup coconut milk
• 1/2 tsp vanilla extract
• pinch of salt
• golden kiwi
• dried apricots
• shredded coconut
• slivered almonds
Combine the oats, coconut milk, vanilla and salt in a bowl and mix well.
Divide between four jars and refrigerate overnight, at least six hours.
Slice fresh mango and kiwi and dried apricot. After the oats have been in the fridge for at least six hours, top with the fruit as well as coconut and almonds.
And that’s all there is to it! You’ll have four ready-to-eat servings of this delicious and healthy breakfast waiting for your in your refrigerator. Meal prepping doesn’t get much easier—or beautiful—than this!
